Oh dear, I am in a very non-old-style quandary. I normally get a veg box delivered every fortnight and have been trying out two companies to see which is better value. They make you set up a regular order but I have been cancelling it if I don't feel I need it and to keep costs down.
However, my kitten has been sick this week and I took my eye off the ball- to find that two veg boxes have been delivered this week- one from each company as I forgot to cancel! Needless to say I have now cancelled both my accounts in sheer horror at the cost this has incurred, but still have to think of a way to use up all of the veg!
For only two of us (myself and hungry OH), I now have
-1 large bag swiss chard
-1 large bag spinach
- 2 large ettuces
- 2 medium courgettes
- 20 runner bean pods
- 1 medium bag sugar snaps
- 1 bunch spring onions
- 1 whole cucumber
- 5 regular onions
- 2 beetroots
- 1/2 an onion squash
- 2 punnets cherry tomatoes
- 5 apples
- 1 bunch rhubarb
- punnet redcurrants
Which of these items can I keep for longest and which could I maybe freeze? (Have some freezer space but not loads). The obvious solution is to turn veggie for a week but OH does like to have some meat most days and we had a veggie lasagne last night already!

Oh dear, been there and bought the t shirt lol! I now get 1 small box every fortnight but still often can't get through it. Here's some suggestions:-
Freeze the stuff that won't take up too much freezer space
-1 large bag swiss chard (can be wilted and frozen)
-1 large bag spinach (also can be wilted and frozen)
- 2 large ettuces (make a huge salad)
- 2 medium courgettes (courgette and tom bake)
- 20 runner bean pods (prep blanch and freeze)
- 1 medium bag sugar snaps (prep blanch and freeze)
- 1 bunch spring onions (add to large salad)
- 1 whole cucumber (add some to salad, make a dip using yogurt, mint, garlic and cucumber)
- 5 regular onions (these keep fairly well but you can also freeze)
- 2 beetroots (we love these grated raw with grated carrots or grated apples and lemon juice)
- 1/2 an onion squash (Is this like a pumpkin? could also be prepped and frozen, my sister makes pumpkin cookies)
- 2 punnets cherry tomatoes (Add to salad or just eat like we do as sweeties)
- 5 apples (make a crumble/pie)
- 1 bunch rhubarb (could cook up with the redcurrants for pie filling)
- punnet redcurrants (see above)

- 1/2 an onion squash - peel and lightly steam in microwave, or bake. Cut into chunks and it makes a lovely lasagne with the chard/spinach - DD's meat eating friends loved it :T

- 5 apples -keep in fridge for a couple of weeks
- 1 bunch rhubarb - jam
- punnet redcurrants - eat or freeze

Thanks for the suggestions both- have calmed down a bit now I've put it all away and can't see it everywhere! Glad to see some of it will keep a long time as not enough space to freeze everything!
Seeing as it is so cold here, I might get on with making some sort of fruit pie- just experimentally tried a redcurrant raw and it wasn't nice!0
