buffet food/finger food that i can freeze in advance then just defrost

Hi all,
Please can you help me with the above?
All i can think of is quiches that i can make, cook the freeze!
I want to be able to do alot in advance, and be able to freeze then defrost as it will be a cold buffet.
I'm going to do alot of pasta dishes,potato salad,cous cous dishes the day before.
Im catering for about 100 people.
