I want to buy a table

I'm looking for a decent size table that can easily be folded down/dismantled/stored when not in use, probably behind a sofa (as a fabric cutting-out table; a trestle for pasting paper isn't big or sturdy enough.)

Is Ikea the obvious place?

Probably, yes. They used to do separate legs and tops (not sure if they still do). If they do, you might consider using their legs with a piece of mdf the size/shape you want which can be stored behind the sofa :)
Ex board guide. Signature now changed (if you know, you know).
