Mortgage type advice

Hi all,
I need some advice on what type of mortgage will suit me best. I have just had a house built for me and my partner worth £495,000 but we are only paying back the cost of the build plus paying off our debts to my father in law. So we need to get a mortgage of around £210,000 to pay him back.
I am not sure what type of mortgage to go for, would like to have the option of overpaying if possible and i would like to know how much is going out per month, so possibly a fixed mortgage?
Any advice or tips on what is currently out there.
