I have a half carton of coconut cream that says it should be used within 1 day of opening. I don't want to use it yet, so can I freeze it? It is longlife in a waxy carton like fruit drinks come in.
Thanks

Hi, I have previously frozen coconut milk from tins which i have used in curries (dont know if this is the same as cream) in my icecube trays (which i later emptied when frozen and bagged into the freezer) so i could pull as many or few out as i needed to for the curry the next time and drop them straight into the curry where they melt.
Sorry I dont know about the cream, but if it was sitting in my kitchen i would be freezing it!0 -
Ive often frozen it in those little wax boxes, it comes out a bit watery, but still works in my currys!!!!0

Thanks - I've actually used it up by making a fab lentil and sweet potato curry that I foud on another thread... I saw the recipe and couldn't resist (!) but I have two more tins of coconut milk that I had been avoiding opening for the same reason.. I'll now dig out my ice cube trays ready for when I open those tins!!0
