Okara overflow...

My OH made tofu last night, and managed to make the biggest amount of okara (the remnants of the soybeans once you extract the soy milk) I've ever seen!

We have okara and seaweed "fishcakes" on tonight's meal plan, but honestly, it's barely going to make a dent in the pile!

Do any of you lovely people have nice recipes for okara i could make ahead and freeze, at all? I could just freeze the left over okara, but it tends to lurk in the corners of the freezer for ages when I do that...:o
