What to Eat Now - Peach Preserve recipe wanted!

Hi,

Did anyone watch 'what to eat now'the other night or does anyone have the peach preserve he prepared for a ploughmans? I can't find the recipe anywhere and would really like to try it out. Please help :o

    Nigella Lawson also has a recipe for Spiced Peaches.

    The book people are doing an offer on those cook books, is it a good series?

    I love the series :D, I wouldn't buy the books because I don't, as a general rule, buy faddy cookbooks and I'm rubbish at buying recipes.

    He has some really cute ideas where he did a picnic basket made from a hollowed out loaf of bread and fresh lemonade. He did a good sauce, chimichuri for the bbq too.

    I have just rewatched What to eat now and scribbled down the recipie for Pickles Peaches
    1/2 stone and skin the ripe peaches
    simmer in sugar, red wine vinegar , chopped shallot and pickling spices for 2/3 mins
    remove peaches and bottle
    Reduce liquid to a syrup and fill bottles with syrup.
    i am going to try as Teaso have 12 peaches for £2 today

    How many peaches?? What type of pickling spices? Sorry for the stupid questions.

    I will definitely have a look on the market tomorrow to see if they have any peaches on offer.

    I'm not sure about the recipe but generally for pickling spices you can buy them already blended - it's generally a mix of mustard seeds, dried chillies, peppercorms and other bits and pieces. They're not dear and you can normally find them in the spice aisle of the supermarket.
