Meals for one

My DH is going to be working away 3 nights a week for the next 2 months. Historically when I've been on my own I've been absolutely rubbish at cooking coz I can't seem to muster up any enthusiasm! OR I end up eating the same thing for days on end as I need to use up the ingredients (salad, veg, etc.).

I am now a SAHM and so can't go out and buy 3 ready meals each week as my waistline and bank account won't stretch to it (nor will my conscience these days). So I'm looking for cheap and cheerful recipes for one. Does anyone have any good (easy) recipes for one that dont involve using half the kitchen or tesco's?

I'd love to hear them.

    Leftovers! Cook nice things for when DH is at home, and freeze portions to use while he's away.

    Is there anything you love that DH doesn't? If so, you could take the opportunity to treat yourself a bit - it might give you a bit of inspiration on what to cook, at least. Otherwise, I second the idea of making stuff now and freezing it. I live on my own and do this a lot, so I'm not always just cooking small portions.

    My other half is working away this week - Wales, very exotic!;)

    Agree with freezing the extra portion to save on cooking. I also use the BF being away as an excuse to invite over a friend for dinner (Auntie was over last night!) which means I'm more likely to cook properly and get some girly company too!

    I'm now on my own, and I am having to do the same. No one except me likes liver and bacon, so I can have that!
    I make spaghetti and casseroles, and freeze them so I don't have to eat the same things day after day.
    I Believe in saving money!!!:T

    I also live on my own, I tend to cook myself fish (salmon, tuna, plaice etc) or steak (when it's on offer!), pork/lamb chops etc with some potatoes and veg done in the microwave, all done in less than 5 mins and very healthy. I also have batches of spag bol, chilli etc for other nights when I fancy something stodgy

    I always live alone and I have no freezer, so I often/always eat the same thing 2-4 days in a row. But it's possible to mix n match some things.

    e.g.

    Fry a packet of 8 sausages, boil and mash 1Kg of spuds.
    Wrap 6 of the sausages in pairs in paper towels and shove them in the fridge. Shove most of the mash in a covered dish in the fridge.

    Meal 1: Sausage and mash with beans immediately (1st night)
    Meal 2: Sausage sandwich for lunch the next day
    Meal 3: Microwave 2 sausages and some mash with beans for your evening meal (2nd night)
    Meal 4: Finish off those sausages by eating the last 2 in a sausage sandwich for lunch
    Meal 5: Using the remainder of the mash from the fridge, mix that with cheddar cheese, bake in the oven (or nuke it then brown under the grill) and serve with beans (3rd night)

    Use 1/3rd of a tin of beans each time and you'll have got some variations of meals out of 1 pack of sausages, 1Kg of spuds, some cheddar and 1 tin of baked beans - and you've only cooked once for 20 minutes.
