I have been requested to send one of these to a company.
Stupid question but how exactly do I do this? I've never sent one before.
And should I send a big one, medium or small?

A SAE is basically a suitable envelope which is to usually returned to you with your name/address and suitable postage0

Don't forget to put it inside another envelope addressed to the company or it will just come back to you again empty.

When I'm at the post office do I tell them It's a "SAE"?0

There is no need to tell them its SAE.
Just address a envelope to yourself, put on the correct postage, pop this into another envelope addressed to where it has to go, and then i would get it weighed to make sure the correct postage is on it.
