    What I tend to do is cook my vegetables first e.g if I buy a bulk pack of mushrooms/ peppers/ courgettes/ brinjals you name it, I normally chopped these up add some chopped onion and chopped garlic some dried mixed herbs saute them in a bit of olive/veg oil cool place in containers and freeze I find this is a great way to use up almost all of your veg and you will have minimum wastage, they great for adding to sauces like bolognaise, casserole etc which saves you a lot of time especially if you work during the day:)

    Agree with the above- best to cook up the veg first, then freeze.

    If you don't mess too much with your fridge- eg, open it as few times as you can manage, the veg will thank you for it. All fruit and veg go well in the fridge but potatoes don't really need to be in there- just keep in a paper bag to ensure they do not grow mould though becomming streamy in plastic packaging.

    If you can, cook up a huge meal a day for a while, save and store the rest in the freezer, eating one serving each the same night you do cook the meal.
    Stuff that you could cook could be mince meat with veg chopped up for shepherds pie or home made burgers or cottege pie, currys, fajiita sauces, sweet and sour sauces, chilli, bolognaise, but generally stuff in sauce rather then veg just by itself as when its frozen, you lose the crunch to it.

    Hi, thanks for all your replies :)

    jenniewb - I have been considering cooking dinners in bulk for the week ahead and freezing them - this may solve the problem. I am starting a uni course in September and what with 2 part-time jobs it's going to be a bit of a juggling act with regards to my spare time, so I will probably do that.

    I will have a play around though with freezing different veg and seeing how they come out. If they are a bit watery I'm sure we can have soup or something a few days running lol ;)

    If you have a freezer, then compare the cost of the fresh veg with the frozen equivalents. I had a surprise when I compared Sainsbury frozen pepper and their basics pepper - the frozen was cheaper, almost by definition it would be fresher and there was no waste. As far as I could find there was nothing added to the frozen peppers.

    It really surprised me, but I have been meaning to do some more research as I am sure that there are more surprises out there.

    Also, carrots never last for any time, but peppers last quite a while in the fridge, at least a fortnight if they are fresh.
