What do I do with cold roast pork ?

Options
We have quite a lot of cold roast pork left over from yesterday's roast. I can get OH to eat it as sandwiches, but then never know what else to do with it. It doesn't seem to make a nice 'shepherd's/swineherd's pie' - I've tried using it minced to do stuffed peppers with but that's not very tasty. What do other people do with their cold pork ? :confused:

    I usually turn it into a pie or spice it up to make pork stroganoff. There's an earlier thread with lots more ideas that should help:

    yep stir-fry either with noodle or rice. Other thing we do is add it to tomato sauce and add pasta
  • My mum used to make this brilliant 'pork savoury' with a rolled out oblong of puff pastry, then you filled half the oblong with minced cold pork, leftover applesauce and stuffing, seasoning and maybe some chopped fried onion. Fold over the remaining half of the pastry and bake. To me it was better than the roast.

    simple to freeze sliced, keep for when you want a roast type dinner and can't be faffed - cook your veg, defrost the pork and heat through in gravy and you have a cheap quick roast dinner.
  • Never buy enough meat to have any leftovers, I'm afraid.
