What can I do with ginger peelings?

Made hubby chocy ginger for his birthday, I used 1 & 1/2lbs of ginger, now I have loads of peelings left.
Can I use them for anything?
if not, shall I store them in the freezer till I think of something to do with them? cant bring myself to throw them away.

I think you can boil them gently in sugar & water to make a ginger syrup.

can you share your recipe for choc ginger? It's a favourite treat of mine but rather expensive to buy.0

Its a much stronger taste than the shop stuff because the ginger is so fresh, so don't put loads in your mouth at once!
I used 1 1/2 lbs of ginger
2 cups of sugar
and some plain dark chocolate, don't need much.- peel the ginger and cut into little pieces, I do strips and chunks (1/4" no bigger chunks takes too long to cook)
- put in pan and boil in water for 1/2 hour till tender
- drain off water
- add 2 cups of sugar to the ginger in the pan over low heat
- stir till bubbles and add a few spoons of water to just cover ginger
- simmer for an hour, ( I stir every 5-10mins) should be just golden in colour
- put some more sugar in a bowl and add ginger so its nicely coated
- THEN EAT WHEN COOL:D
- or melt chocolate and add the now crystillised ginger
- place on grease paper and allow to cool
- THEN EAT GINGER:D
