help - can I change single cream to double cream?

    I agree its not the cream. Incorporating air (ie gently whipping) even the lightest cream will thicken it nicely.

    No worries. Just another thought...if you have arrowroot powder in the house you could use this to thicken the mixture - a couple of the vegan recipes I use recommend this - it seems to work quite well, but doesn't affect the amount the ice cream actually freezes.

    In my experience single cream will not thicken when whipped. I think the single cream is the problem. It has only 18% fat compared with 48% fat in double cream. Whipping and double cream freezes well but single cream won't. I've read somewhere that adding creme fraiche can help thicken single cream and make it a whipping consistency but I don't know if that would work with your recipe. :confused:

    Ah well, I'll give it another go tonight and if it doesn't work we can have chilled honey soup instead. ;)

  • On a similar vein, son is Lactose Intolerant, but I can only find single-style cream, but I need double or whipping to make ice cream for family. Any ideas on how to thicken or anyone know where to buy soya or lactose free double cream?
