Broccoli is lovely in tomato sauces for pasta, with or without chilli to spice it up. Grated courgette has a similar taste.
Stephen's chinese chicken and sweetcorn could also be stretched to feed a small terracotta army with the addition of a few peas, a handful of beansprouts, a sliced spring onion and maybe a thinly sliced mushroom/broad beans/edamame beans/green beans/whatever you can find, turning it into something other than just a yummy soup. Hello there - just wanted to say good luck for this weeks meals. i am learning too - i still make mistakes but i am getting it right more and more of the time.
I had never heard of rubber chicken till i joined this site
With mince I make shepherds pie - bulked out with whoops veges, and lasagne, and can usually streeech it enough to make spag bol - even though there is not much mince left by then.
For chicken - i can usually get 4 meals out of it with bits for sarnies, packed lunches and the cat!.
1. Roast - hungry cat gets the skin
2. Curry - bulked out with veges
3. Chicken supreme- with rice
4. Potluck soup with the stock
5. usually enough for me to have HM roast lunch in a lock and lock box for Mon and Tues lunch. usually enough for OH to get a sandwich or two for Mon and tues.
6. Hungry cat gets giblets and skin, and some of the meat off the bones once the soup has been strained.
7. If not curry - we do stir fry, or noodles
