That's a great recipe - I'm vegan and can adapt that easily - I have a lovely little white sauce recipe using soya milk. Have yet to try adding vegan cheese as is not the best to cook with but might have a go next time I make a lasagne. Boyfy - who is a seasoned meat-eater but will eat anything! - loves veggie/vegan lasagne so this will be a little different to either just using veggies in it or with vegemince.

    Thanks!

Jo_R - which is the best vegan cheese you've found? I'm trying to cut out dairy but all the cheeses i've tried taste like salty chalk!

depends what you want it for. for cream cheese I would suggest tofutti (they have garlic and herbs versions as well as plain). for hard cheese i would suggest any cheezley (they do mature and mild cheddar, mozzarella and nacho cheese types). for melting cheese, i'd say cheezley "super melting" mozzarella (not seen any other meting ones). if you want a parmesan alternative, get Parmezano from tesco (near all the pasta)

    hope that helps.

P.S. this is the redwoods foods cheezley site: http://www.redwoodfoods.co.uk/products/cheezly/content.php

I cook quite a bit of veggie food, trying to convince OH meat is not the be-all, partly for health reasons ( he has high cholestrol) and partly through concerned about the quality & ethicality of meat.

Ive got rose elliots vegetarian kitchen and "take five" a little one for "getting more fruit & veg in, the best red onion marmalade recipe Ive ever had.
 Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind

We are all veggie in this house. I make most food from scratch but tend to make things up as I go along rather than follow recipes. I use tinned pulses for quickness but really should use dried chickpeas as the tinned ones aree expensive (but very conveinant).

Another vote for Rose Elliot. My 3 favourites are Cheap and Easy, The Bean Book and The Pasta Book.

We've been a vegan OS household since my 15 yr old came home from school clutching a graphic leaflet and announced 'I'm a vegan now, mum'.

Thought it was a flash in the pan, a but here we are..2 yrs later!

Cheese? We find the Scheese a bit better than Cheezly for pizzas and sarnies.
However, as a replacement in cooked dishes e.g. lasagne, i don't use such items. Instead, i use:

Engevita. It's made by Marigold. It's not exactly cheese-flavour, but seems to give a hint of it. It's yeast-based, and you get it from holland an barrett type shops. Its a bit pricey at over 2 pounds, but you only use small amouts.
