I would probably cook the chicken and then mix in spinach at the last minute so it just wilts. Then mix with cooked pasta and add some olive oil. I would also chuck some sultanas/raisins in if you have some.Love and compassion to all x0

Ooh - I did chicken and spinach spaghetti for dinner the other night. Do you have any chopped tomatoes and mozarella? If so this is the recipe I used. you could mix the spinach with some soft cheese & stuff the chicken with that? then have the pasta as a side dish
or do an italian inspired bake with a tomato sauce then layer the chicken & spinach & pasta together

this is a recipe i found ages ago and feeds 4
350g penne pasta
300g spinach
1 tbsp oil
4 chicken thighs (deboned and skinless cut into strips u can also use breast)
1 garlic clove (finely chopped)
425m/3/4 pint semi skimmed milk
25g plain flour
25g butter
140g mature cheddar (grated)
grated nutmeg to taste (optional)
1 cook pasta
2 whilst pasta is cooking, cook chicken and garlic once cooked set aside
3 add milk to a pan, sprinkle in the flour, then add the butter and whisk over medium heat
4 once sauce has thickened and is smooth then stir in 85g of the cheese, nutmeg and season to taste
5 place all cooked ingrediants in a baking tray then add the spinach mix together well
6 then add remaining cheese on top place in the oven at 200 and cook till golden usually 15 minutes
