Manchego Cheese

Ive got a recipe that calls for this cheese, but from what I have seen, its very expensive. Is there anything that I can use as subsitute?

    Manchego is firm, dry and salty so a good substitute is a decent pecorino. Does the recipe use it as it is or is it cooked?
  • Its in a tart ( with Chorizo, red onion, peppers ) baked in the oven

    Pecorino should be fine for that, sounds lovely :)

  • I agree, aged Manchego is a similar cheese in taste and texture to pecorino or parmesan...you can get other softer manchego but it is not as common.....it was around a lot when I lived in Spain but I think for most recipes it would be the aged one you would be looking at...am not sure how well it melts though in a tart:confused:..is it grated?

    I love love love this cheese, yes it is expensive but I think it is worth it!
