Using Parsley

Hi
Does anybody have any recipes to use up big bunches of parsley? Was thinking something along the lines of Pasley Peso if such a thing exists and is remotely edible :)

It's something that I have in the garden, and seems a waste to just let it go to seed.

Thanks

  • I'd love to hear ideas as well as I too have loads in the garden. Some is starting to turn yellow though so I'm not sure if it's still ok to use? Will parsley freeze well?

It freezes very well - I washed and dried mine and chopped it in the chopper attachment of the blender and froze it - wonderful.

Tabbouleh (cracked wheat salad) uses lots of parsley. You soak the cracked wheat (bulghur wheat) for a few hours, then squeeze the water out using a teatowel. Chop a good handful of parsley, an onion, a couple of tomatoes and mix with the wheat. Dress with a good olive oil, pinch of salt and the juice of a lemon.

    Hope you enjoy it!
Finally I'm an OAP and can travel free (in London at least!).

we always chop a big bunch very finely then mix with butter and add to potatoes.

you can but butter and chopped herbs in a blender then mix all together then roll into clingfilm into a nice long roll, freeze then cut of slice as neeed, - great for steak, potatoes, mushrooms, veggies etc

no need to chop before freezing, just place in plastic bags, freeze, then crush with a rolling pin whilst still in bag.
