B&W offer of loan

I received an offer of loan from B&W yesterday which they want me to sign and return along with my direct debit details but theres just one thing thats got me slightly puzzled.
It states on the offer that it is valid for six months, yet further down the bottom it also says that if I decide to accept the offer I need to return the documents within 21 days.
I'm looking to delay the completion date by two months as im currently on a fixed rate elsewhere (I've let my solicitor know when i wish to move) so will accepting the offer and returning the documents within 21 days mean the mortgage would start as soon as possible or should I delay accepting the offer until nearer the time I wish to transfer my mortgage (i.e. 2 months)?

You can accept the offer and arrange completion with the solicitors for the date you want.0

It depends what rate you will be paying if you don't complete quickly.
