I made a Simnel cake at the weekend and have about half a kilogram of homemade marzipan left over from decorating it. I just wondered if anyone knows if it freezes well.
Replies needed quickly please, as I've already eaten and sneakily replaced three "apostles"!

Why freeze it, make it into marzipan fruits, colour eith food colouring and make into oranges, apples, pears bananas, instant petite fours, or batternburg cake!!!!
Actually you do not need to freeze it, just wrap it in greasproof paper and then over wrap with foil, keep it in the fridge.

Holland & Barratt have pitted dates on offer at our local one at the moment.
Basically, just roll balls of marzipan and stuff each pitted date (yes, I know life is too short, but the are scrummy) If you want to use them for a nibble with drinks or to simply have a pretty Easter snack to hand around, you could colour the marzipan so you have yellow, pink, pale green stuffings (very Spring colourings :laugh: )

lol.....the marzipan on my christmas cake that was frozen didnt fare too well.....came out a bit runny (eek!) but didnt lose its flavour....not that you could tell with alcohol laden fruit cake!wading through the treacle of life!

You shouldn't freeze it. Just wrap in cling film and then foil and keep in cool, dark place. I usually place mine in a polythene bag aswell. If when you go to use it again and it has gone hard just wam it up in the microwave very gently on a plate in short bursts of about 10 secs at time and then you should be able to knead it again & use it. HTH0
