Trying to make a meal out of what's in the cupboard - will it work?

Hi, I hope someone who is a little better at cooking than me can verify if this has potential before I waste some food.

I am thinking of doing -
lamb steaks marinated in mint rosemary and garlic and olive oil
served with polenta, feta and mushrooms.

I have never cooked polenta before, I thought I might try frying it in cubes (it's stuff out of a packet in a big block), with the mushrooms then adding cubes of feta to serve.

Not sure if this could do with another veg - have in carrots, asparagus or new potatos, or salad stuff.

If anyone could give me some pointers I would be really grateful.
