If you make a vicky sponge ,coat in honey or apricot jam and totally incase in fondant ready to roll icing ,it will still be lovely and fresh on Wednesday

Thanks for all the suggestions everyone! I've decided to make a Victoria Sponge as that will look like a birthday cake (can stick a candle in if I like)! I love the carrot cake recipe and I think I'll be making that one next time I want to make cake: youngest has his birthday in the next 10 days so I might make it for the mums who will show up to his party!

I'm also considering making his birthday cake in advance, freezing it and then just icing it on the day (I'm doing Nigella's chocolate Malteser cake).......it will cut down on the work on the day and the sponge seems like it should freeze ok!
