Hello all
might sound daft but as anyone got any good recipes for cakes that uses up veggies
recently went to the good food show in brum and saw a stand that had veg chocolate cake on it -- claiming to be made from vegetables only
so if anyone has any good recipes please

Possibly a chocolate beetroot cakeIf you look on the LH panel on that recipe, there are sweet recipes using amongst others, courgette, marrow and pumpkin

If you look on the grocery challenge front page there is a recipe I posted for courgette teabread/muffins -they are gorgeous..I took my 2nd courgette out of the garden yesterday and made some more -these are whats left
They are very like carrot/passion cake....mmmmmmmmmmmm-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -

I can vouch for MrsM's courgette muffins they are GORGEOUS :drool::drool::drool:
We had a huge glut of courgettes last year from our allotment and I made loads and froze them, even my pal who hated courgettes thought they were delicious and they are SO easy to make! :T0 -

I've just made six big cakes with the courgette teabread recipe. I made them with a bagful of courgettes that a guy at work gave me (he has loads of them in his allotment and I didn't say no)
They're really yummy. I'm going to freeze most of them.0 -
I would never have thought of making cakes with courgettes. Sometimes they are sold off cheaply at work. I will get some and give it a try.Anyone who lives within their means suffers from a lack of imagination:beer:
