okay...im a bit of a bread making nut job now ( gotn three proving as we speak ) the only reason I didnt get a fourth going was because I had ran out of bread flour...and i got wondering...is there any reason why I can not use plain/sr flour to make bread?

It does not have enough gluten in it and may not rise properly
That said many do use plain flour, but it soon goes stale, OK if using that day or toast next morning etc
I have started experimenting with 20% Smartprice plain & 80% strong bread flour, so far seems to work OK, may try 40/60 nextWhen an eel bites your bum, that's a Moray0 -

I have always wondered this but never tried it. I had no strong flour left last night so I set the breadmaker going with plain flour and there was no noticeable difference in the bread this morning.
