Help, I need some meal planning inspiration!!!

Hey all,
I am trying to find some new meals to make for OH, myself and our baby. I don't eat meat and rarely cook meat for dinner, though I sometimes buy OH a treat now and again. My meal time faves include veggie mince chilli and bolognese, shepherds pie, plenty of pasta and different home made sauces, I use a lot of quorn items like steaks, fillets etc with salad or veg and pots etc. Other than that I don't do much else in the way of real from scratch cooking but would really love to find a few more dishes to add to my meal plans.
I need some guidance and advice really, I am not the most confident cook and have to fit it in with looking after my baby, the house etc. So any ideas? Thank you all so much in advance for the help.

We aren;t veggies, but some of our non-meat meals are:
Spanish omelette. You can serve with some extra veg if it's not enough for you but I use five or six eggs for two people and it's massive, paacked with potatoes and veggies.
Pasta with veggies in tomato sauce made with veg and a can of tinned toms plus black pepper and herbs.

I'm not veggie either, but we tend to have a fair few veggie meals each week. I don't like meat substitutes, so I tend to make things with pulses.
without pulses-wild mushroom risotto is delicious, pasta sauces (roast whole tomatoes with garlic and onions while the oven is on, once all soft and slightly charred blitz them in a liquidizer-yum, can also add peppers etc. I dont bother removing skins, or sweat onions peppers garlic and chilli then add tinned toms) and veggie curries-with cauliflower and potatoes etc.
Curries are really good for veggie food-can use lentils chickpeas etc
I also make a tomatoey/chickpeay/peppery stew-with onions and peppers slowly fried, then add smoked paprika and tinned tomatoes and chickpeas and reduce to a thick sauce, we have this with brown basmati and wild rice-its one of my current faves
