    I think it is fun (as well as money saving of course) to cook in this way. Your bargains sound even better than mine.

    from now on im going to do my shopping last thing in the evening - you will find me in morrisons 30 minutes before it closes from now on!!!

    ps, re the original question - i just chop up the squash into cubes, bung it in about a pint of veg stock, bit of s&p, simmer for a good 30-45 mintues, then blitz with the blender, adding more stock if its too thick.
    for an alternative, add about 100ml of coconut milk and a couple of teaspoons of garam masala.....if you like it very spicy, add a bit more.

    Alternitives for butternut squash & aubergines are :

    Halve squash & de-seed, brush with oil & fill hollows with chopped goats cheese/spring onion/peppers, very loosley cover with foil (tent-like so the cheese doesn't stick) and roast for an hour. Delicious with cous-cous.

    Slice aubergine lengthways into 1/2 cm thick slices, brush with oil & lay on a chopped mix of cheese (brie/goats cheese is delicious but plain old chedder works when on a budget), (red) onion, tomato , herbs & chopped anchovies or black olives if liked. Have also used capers which are fab but expensive. Roll up, pin with a water-soaked cocktail stick if it won't stay rolled up, sprinkle with grated cheese & gently cook for approx 30 mins. Nice with rice.

    To get the best bargains listen out for the guy reducing the food (the sticker machine makes a clicking sound which is auduble for several isles :) ). Follow him around and get the reductions as he makes them. I am sure the guy at the bread sections thinks I fancy him. He grins and chats to me evry time I turn up.
