Butternut squash and aubergine

Does anyone know how to make soup with butternut squash? I got a couple reduced to 9p each. I have seen butternut squash recipes in magazines, but have since thrown them out.

Also got a couple of aubergines for 9p too -any ideas for what to do with them?

    Butternut squash soup

    Preparation time less than 30 mins

    Cooking time 10 to 30 mins







    Ingredients
    ½ butternut squash
    ½ onion, sliced
    1 clove garlic, chopped
    2 tbsp olive oil
    290ml/10fl oz water, boiling
    1 chicken stock cube
    1 tbsp Greek yoghurt

    Aubergine curry

    Preparation time less than 30 mins

    Cooking time 10 to 30 mins







    Ingredients
    ½ stalk lemongrass, finely chopped
    2 garlic cloves, finely chopped
    ½ red chilli, finely chopped
    1 tbsp chopped fresh coriander stalks
    1 tsp cumin seeds
    250ml/9fl oz coconut milk
    50ml/2fl oz hot water
    4 Thai aubergines, halved
    ½ lime, juice only
    1 tbsp chopped fresh coriander, to garnish

    This soup is lovely, i make it all the time, i also add a couple of sweet potatoes and 3 - 4 carrots.

    I made this earlier and have just had some for lunch. You're right -its lovely.

    The Sainsbury's site has this recipe which looks interesting. I like the Sainsbury's site, you just type in the name of the ingredient you're trying to use an it usually has loads of recipes. Im sure they've got lots of suggestions for aubergines.

    i have just this minute polished off a bowl of soup that i have just made for the very first time with the remnants of my fridge, this consisted of half a butternut squash that was reduced to 13p roasted for 40 mins (with yesterdays jacket spuds to save on leccy)then scooped out, half a bunch of very bendy chopped celery from the back of my fridge, half a bowl of cold boiled new potatoes which were also leftovers, 2 x fried onions 2 x cloves of garlic 1 x grated carrot and 1 thumb sized bit of ginger. i threw this all in the biggest saucepan i could find with 3 veg stock cubes and a pint of water let it bubble away for an hour then threw in some hot chilli powder some salt n pepper n blitzed with my bargain £5 tesco blender, this tasted gorgeous with some fresh crusty rolls even my other half complimented me on it which is unheard of! :eek: and theres plenty of it for lunch tommorrrow too :D :j i will definately be doing this again because i would of just normally thrown most of said ingredients in the bin before my lightbulb moment, it just shows you can eat on a very low budget if you try!

    Just finnished a meal from the second butternut squash. I was a bit more rushed so sipmly good it with a punnet of organic mushrooms (also 9p!) in a korma sauce. It was absolutely lovely. Here's hoping they are reduced on a regular basis :)

    Morrisons about an hour before closing time. Yesterday I filled one of the smaller size trolleys until it was overflowing with fruit and veg and break/cakes. Everything was reduced to 9p. Oh except for a couple of bottles of organic milk which were reduced to 20p. The entire lot cost me a grand total of £8.38 :)
    My favourite buys were packs of orangnic strawberries, 'best' grapes and lovely chesse and tomato flat breads. I bought a total of 7 nets of oranges which I shall squeeze to make fresh orange juice.

    i always scour my local sainsburys for bargains at around 7pm because its a biiig shop on a kind of industrial type road with no houses within about 2 miles so after most people finish their jobs come 6ish there is hardly anyone around which is all the better for me as i just go along and scoop up most of their bargains in bulk as i have 3 freezers 1 of which is a big industrial 7ft freezer :D i have bought prepacked meat by the trolley load this week beef/ham/chicken all for 19p a pack, should keep oh in sandwiches for work for the next year or so :j the only trouble i have is using it all as i cant say no to a bargain :rolleyes: and often i have a fridge full of out of date veg/fruit and struggle to use it all before it spoils, tea times are always an experiment in this house you never know quite what you are gonna get! :o
