remortgaging in Scotland: solicitor

Hello all,
I am after some information about finding a solicitor to do the conveyancing of my re-mortgage in Edinburgh. I will receive up to £400 cash back from HSBC to cover the legal expenses, but I have to say that I have absolutely no idea of what it could cost me approximately. So, I'm facing the daunting process of calling random names amongst the 100+ solicitors in the yellow pages! I also tried some internet tools, like agentquote.co.uk which comes up with £270 for the best price (good!). I am a bit surprised that most of the hits from this website are solicitors based in England! Is it possible to do all the conveyancing by mail only then? I thought I had to go physically to the solicitor's office to sign paperworks in front of witness, or something similar...
Any advice or information would be very helpful! My remortgage is for £57000.
