Chicken stew. We have it all the time now. Easy to make and uses stuff which you should have in the house.

Chicken stock cubes, Potatoes what veg you want to put in with it.

It's a choice between stew and pasta. Rice is complicated :) and curries we don't do. I tore the chicken up into bits & it looks a lot more possible now that it will feed us. In portions it looked very wee, somehow !

Rubbish. You're never too old to learn. I'd just love to be able to show older people, either divorced like me, or bereaved, just how easy and how much fun it can be.

I've been working out just how far, using just my existing recipes, a singleton like me could stretch a "rubber " chicken.

Sunday: Roast the chicken, and have a leg & a wing with roast potatoes & mixed veg’.
Monday: Have the remaining leg & wing with oven chips and/or a salad.
Use one of the breasts to make 2 portions of chicken korma.
Use the other breast to make 2 x 250ml bowls of chicken & sweet corn soup.
Use the carcass to make 4 x 250ml bowls of chicken soup.

This gets no less than 10 meals out of it, 8 of which can be frozen.

Unless anyone can do better, of course.
The acquisition of wealth is no longer the driving force in my life. :)
