A good minty, grainy salad recipe?

I have a bunch of mint and an urge to not eat anything hot tomorrow evening! I have tabbouleh in mind but a) I've never made it and b) it doesn't seem to traditionally have mint in it. I am happy to go and buy bulgur wheat if need be. Alternatively, I have a bag of quinoa doing nothing in the cupboard. I have a lemon or two. We had a really nice minty couscous salad in a moroccan restaurant recently.
Can I realistically expect my O/H to eat a dish like this alone, or will it be drab without some kind of main (meat) dish?
Can anyone meet the challenge?
I am willing to shop if necessary! :j I've had a quick google but there's no substitute for a tried and tested recipe IMO

Make the tabbloueh (which type of quinoa do you have? You can use couscous at a push as well) and add mint, it is awesome!
Or try making it with apple and mint instead of tomato. It is so good... and very fresh and light!
Your OH will love it. However, if he is the type who insists on eating meat at every meal, you could try making some lamb kebabs to go with it (most decent butchers will sell these already made at this time of year). Or falafel (if he is not bothered about eating a veggie dinner). I'm lucky, my OH is happy to eat a mixture of meat-based and veggie dinners as I wouldn't like to eat meat every day - and it saves us money too!I know some OHs are not like that though.

Nabowla, posted a recipe for tabbouleh using mint hereand there are lots more recipes for using up mint on that thread.
To make minted couscous, I add the stock to the couscous and once it's beginning to bulk out I add mint sauce (how much depends on personal taste so start with a little and then you can add more if you want to). Then add veggies of your choice. I like to stir oven roasted courgettes, mushrooms, red onions, garlic and tomatoes through it.
