Easter Biscuits

Quite often at Easter I don't give Easter eggs to my family but make something instead. This year its truffles but last year I made a tin of the following biccies
Easter Biscuits
Preheat oven 190C. Makes 24
9.5oz plain flour
6oz butter
4oz caster sugar
2oz currants
pinch nutmeg, cinnamon & mixed spice
grated rind 1 lemon
1tsp lemon juice
Mix all ingredients together. Roll out to 1/4" thick and use a 2" cutter. Bake 10 mins and sprinkle with caster sugar whilst still warm.

I think they'd be lovely with a topping [they come out rather like a shortbread]. I would think a lemon glace icing would work well.
