Plum crumble - why are the cooked plums sour?

Hello all cooks,
I made a crumble with lovely sweet plums, but even though I put a lot of sugar in both plums and topping, it was so sour!
Can anyone enlighten me as to how very sweet plums can become so sour once cooked?

I can't comment as to why your plumbs ended up sour, but I can recommend this spicy plumb crumble recipe.
I've not made it, but have eaten it and it's delicious!0 -
It is due to the degradtion by heat of fructose (a disaccharide). This molecule which gives fruit its sweetness is basicallt carcon oxygen and hydrogen so it can be broken down to water and carbon dioxide neither of which are sweet.
The other explanation could be that the plums were not as sweet as you thought. Peach and pear crumble is nice and sweet.Who I am is not important. What I do is.0 -
I usually cook my crumble and then put brown crunchy sugar on afterwards. mmmmmmmmmmmake the most of it, we are only here for the weekend.

I haven't had the OPs problem but then I usually cook my plums in a little water with splenda or canderal or something and then put them in the crumble dish, add blackberries (frozen from last years pickings..), and the crumble mix on top. They are always nice and sweet that way.

Sometimes if you put a lot of sugar in the crumble then the fruit seems sour by contrast even if it has been sweetened.0
