Chili jam

Options
I have just finished reading "That Old Ace in the Hole" by Annie Proulx. She mentions one of the characters making jam with blueberries, chilis and bourbon in it - sounded interesting so I thought I would try it myself. However, I am beginning to think it must have been a figment of her imagination, because I can't find a recipe - the nearest is a barbeque sauce.

Have any of you knowledgeable people ever come across such a recipe, please?

  • There's a recipe on the BBC good food site for chilli jam that uses brandy
    http://www.bbc.co.uk/food/recipes/database/chillijam_4892.shtml
    - you could use that recipe as a base and substitute some of the ingredients. I was googling chilli jam recipes yesterday after seeing the recipe for chilli jam and quiche on 'come dine with me' - I'm quite inspired to have a bash at some myself !!

Thanks! I can see I am going to have to experiment, but at least I will have an idea now of what proportion of fruit to chillis is sensible  (Maybe someone should invent a smilie for indigestion...)

  • I've found a recipe for chilli jam that uses apples (it's the pectin in the fruit that sets the jam apparently!) - maybe it's the same for the blueberries?
Thanks for this thread as the chilli king website does look really good!

When you've cooked the fruit and left it to strain, the resulting liquid is then measured, and for each pint of liquid you need 1lb of sugar.
