not much difference Luc- here is Wiki's take on it, I always think of Baked Chicken as a more American term myself.
Baking is the technique of prolonged cooking of food by dry heat normally in an oven. The dry heat of baking changes the structures of starches in the food and causes its outer surfaces to brown, giving it an attractive appearance and taste, while partially sealing in the food's moisture. It is primarily used for the preparation of bread, cakes, pastries and pies, tarts, quiches, and cookies."
"Roasting is a cooking method that also uses dry heat, whether an open flame, oven, or other heat source. When roasting, the food may be placed on a rack, in a roasting pan, or it may be rotated on a spit or rotisserie to ensure even application of heat. During oven roasting hot air circulates around the meat, cooking all sides evenly. While cooking, meats and vegetables are usually basted on the surface with butter, lard, oil, or pan juices to reduce the loss of moisture by evaporation."
