Thanks for sharing the recipe Penny :T I appreciate the quantities too as only DH, myself & DS1 actually eat it so I'll follow your amounts. I never thought to put a mixture of mayo & salad cream in that'll definitely stop it tasting vinegary

Here is ours.
Tonight was chippy as we had a day out on a smaller island and it was good but tiring!
Sun 21st- chippy tea
Mon 22nd- Macaroni cheese and salad
Tue 23rd- Cranberry and pork sausage, pepper and sweet potato hash
Wed 24th- Chicken and peppers with plum sauce (jar) and HM egg fried rice
Thur 25th- Beef stew and doughballs with mash
Fri 26th- Pepper, courgette and smoked sausage frittata and chips
Sat 27th- HM Soup and sandwiches (HM rolls on cheese or ham)
DS will generally have the same as us, although will have something other than rice on Wed as he does not like rice!

Morning all!
A bit later than normal (been away for the weekend) but I'm vaguely organised.
Monday - quorn lasagne and casear salad for me, meat lasgane for OH
Tuesday - chilli for OH, leek and potato soup for me
Wednesday - sausage casserole (meat for him, quorn for me)
Thursday - chicken gnocci for OH, I'm away with work
Friday - OH has big lunch in work so something on toast for him, jacket spud and cheesey beans for me (will be home late)
Have a good idea about what we're having next week too but I'll enlighten you nearer the time!0 -
Ingredients:
1.kg Chicken breast or mini breast fillets
1 heaped tablespoon of finely grated fresh ginger
3 cloves of garlic, minced
150g thick (plain) yogurt
1 dried red chilli
2 finely chopped onions
1 tbsp ghee or veg. oil
1 tbsp ground coriander
Pinch of ground black pepper
1 tsp turmeric
1 tsp garam masala
water
75g creamed coconut
salt, to taste
2 heaped tbsps ground almonds
finely chopped Coriander Leaves, to garnish
juice of 1/2 lemon
Instructions:
1. Cut the chicken breasts into bite sized chunks
2. Mix the chicken with the ginger, garlic and yogurt. Cover and marinade for 12 hours or in the fridge overnight.
3. Liquidise the chopped onion and red chillies, add a little water if you need to. blend til smooth.
4. Heat the ghee/oil in a pan.
5. Add the ground coriander, ground black pepper, turmeric and garam masala and stir fry for about 1-minute over a low heat.
6. Turn up the heat, add the onion and chilli paste and stir fry for 10-minutes.
7. Add the chicken and the marinade and continue to stir fry for another 10-minutes.
8. Add the creamed coconut and enough water to *just* cover the chicken and bring to the boil, stirring until the coconut is dissolved. Stir in the ground almonds.
9. Reduce heat to low, cover the pan and simmer until the chicken is tender (30-40 minutes).
10. Remove from heat, add lemon juice and salt to taste. Mix well.
If it gets a little dry just add some water, this is fine, also i add some sultanas and a little sugar to sweeten.0 -

This is my first time posting in this thread. Making a food budget and making your own meals is such a good way to save money. I'm kind of proud of my food budget, but never get to discuss these things cos nobody at my work cooks their own meals. it isnt really normal among my peers. so its good to be here with people who do!
thriftyscotslass i totally recommend making your own curries, they're so easy tasty and cheap to make :-)

Hello everyone, it's my first time posting here - I'm a bit of a moneysaving newbie and find everything on this site fascinating and inspiring!
So here's my mealplan for the w/c 22nd June - based on what we have in fridge/freezer and storecupboard, so no trips to the shops this week!
Mon 22nd (tonight) - moroccan chicken with chickpeas & cous cous (I already made the moroccan chicken sauce in slow cooker last week and froze it, so I've defrosted a carton for tonight)
Tue 23rd - kedgeree made with 2 eggs that need using up, onion, garlic, frozen veg, curry spices and smoked mackerel
Wed 24th - Quorn goujons from freezer with home made bombay potatoes (yum) and frozen broccoli/cauliflower on the side
Thurs 25th - Baked herby polenta (sooo cheap and yummy) with grilled turkey steak topped with cajun seasoning and some frozen sweetcorn on the side
Friday 26th - Fish fingers with home made chinese style noodles & whatever veg we can find
Saturday 27th - HM tomato and garlic sauce with pasta and garlic bread (stinky breath but lovely!)
Sunday 28th - Grilled chicken breast with roasted carrots, potatoes & gravy
That's me done - now I've read it back, it sounds quite a nice week of scoffing! If anyone would like any recipes for the above, please ask (I really love to cook).
