Having just eaten said liver I thought I'd share a new recipe I just tried as it was absolutely delicious, if I say so myself
lambs liver (or calves)
streaky bacon
sliced onion (I used a red one as it's all I had in)
large glass red wine (make that 2 - one for the cook and one for the marinade)
tbsp red wine vinegar (sherry vinegar in my case as had no red, but any would do)
2 crushed garlic cloves
bay leaf
salt
Mix together wine, vinegar, garlic, bay leaf and good pinch salt and marinade the liver in it for a few hours.
Heat up frying pan and cook the streaky bacon until crispy then put aside in some foil to keep warm. Add a little oil and cook the onions until soft and golden and set aside in a dish. Put the liver slices in pan, adding a bit more oil if needed, and cook about 4-5 mins until brown underneath, then turn and cook for another 2-3 mins. Put these in the foil with bacon to keep warm then pour the left-over marinade into pan with the onions and cook for a few mins until it thickens slightly.
Serve with mustardy mash and green veg :drool:

I have revisited liver, bacon and onions for a main meal after not having it for some 40 yrs ! My mother used to make us eat it and I was none too keen but I love bacon and onions so now I am retired and need to save the pennies decided to try it and it was delicious. It now forms one of my regular meals (hubby doesn't like it, so I have to freeze the rest) but even if you don't end up eating it, it costs a meagre 60 or 70p from TEsco and is very good for you, so even if I end up throwing some away, it is a cheap, tasty meal.
Great family dish if you need to save money in these hard times !
I bet some kids have never been given it for their tea. Parents seem more impressed with spending loads of money on Indian and Chinese takeaways but it is always worth remembering when you are budgeting that food goodness doesn't always mean expensive !0 -

Fried on its own or coated in oatmeal - delish :T

I froze some once,, don't know what went wrong but it was all sloppy and really rank when I thawed it,, I wouldn't even let my dogs have it! I have frozen it since O.K. though..I am on my own now so having to be a bit more discerning about cooking too much. Simple liver recipe,, (works better with deer liver though) in a lidded casserole dish put a layer of onions, a layer of liver,layer of onion etc until there are at least three layers, (you can add bacon if you wish) cover with milk and put in the fridge for 12 hours at least, 24 is best,, then put in the oven on gas 3 or leccy equivalent until the liver is cooked, then serve with good ol'e country veg and use the juice for the gravy! I have this with potts swede broad beans carrots brussels or any combination which you like!! Delish.
