    I always put lentils in a bowl and pour boiling water on them and let them soak for half an hour before using them.
    They'll always go soft and break down if you do this.
  • I bulk out my spag bol sauce by putting a couple carrots and a whole load of mushrooms in the food processor - chopping finely and then adding to the sauce. Do the same with cottage pie. Fools the veggie haters every time :)

    I always soak lentils in boiling water, whatever the colour lentil, for at least half an hour before cooking as this helps to hydrate them. Also if you are cooking them in tomatoes of any sort this has an acid which will prevent lentils/pulses from softening.
