Hi. I want to bake some gifts as a thank you present. But I can only bake it the night before giving or in advance and freeze/defrost. I was wondering what would be good for this. I was thinking BB muffins but muffins are only really good the day they are baked most people say (though I'll eat them any time?!). They're definitely good defrosteed but you'd need a microwave/oven to heat them up I think and I can't assume there'd be one available. Cookies? But I'm not sure they'll be any good defrosted/the next day. That said, I could make these pretty late at night so it wouldn't be a whole day. 

Any other ideas for something most people people like and will taste good without having to be reheated? Or would said muffins/cookies somehow work?

I've baked a lovely victoria sponge cake and kept it in a tin for a couple of days - that should keep well.
You could fill it with some good strawberry/raspberry jam and then ice it with glace icing and place some halved glace cherries on the top. Or just dust with caster or icing sugar (if using icing sugar, try placing a paper doily on the top first to produce a lovely pattern).
Or how about some lovely home-made fruit scones - if made in the evening they would be good the next day (kept in an air-tight box or tin.0 -
I bake muffin sized cupcakes(for my daughter to take to work) with realy nice frostings and these will keep for two or three days.
Use butter rather than a spread.Any cake cooked with butter will keep better than one made with a spread.Also they won't get that greasy taste after a day or so.0 -
What about making some chocolate truffles? They are really easy to do and keep really well in an airtight container in the fridge. Lots of my friends get these as birthday/christmas gifts!
All you need is 2 bars of dark choc, melted,
add a small glug of either expresso, or something like rum, tia maria, etc, and stir in (the choc will go hard and funny looking - it's not ruined I promise!)
then add a tablespoon of honey and mix in - if the choc hasn't gone smooth and dark, add a little more honey.
Leave to set in the fridge for a few hours, then roll into balls and coat with either coco powder or dessicated coconut.

A good sponge, whether it be in the form of a cupcake or big cake will keep fine for 2 days or so if you get hold of a good recipe.
Don't decorate (icing, cream etc) till the morning you want to gift it though.
There are plenty of things to home make that don't need to be eaten the day you make it. Rocky road, fudge, truffles, scones, biscuits, loaf cake... in fact, I;d make pretty much anything the night before if I needed too.I love surprises!0 -

Hi. Thanks guys. Are cupcakes and fairy cakes the same thing? Also, is it important to use fresh eggs with spongey type cakes as I think mine in the fridge are at least two weeks old. I'm not making whatever I'm making yet but I might make a sponge cake just because this weekend if it doesn't matter much.
