Slow cooker expertise required and fast - a very quick question

Hi all, sorry for not posting on an existing slow cooker thread but I need replies pretty quickly if possible.

I have had a beef stew in the sc since about 7.30 this morning on low, then I switched it up to high when I added the mushrooms at about 4pm. Just been to have a look an the beef is browned in some parts, still red on others.

I didn't brown the meat before I chucked it in as I didn't have time.

Anyway, the question: is it ok to eat if the meat is still red like this? It has been on all day!

    Thats pretty much what I do with my beef casserole, for the same amount of time - I dont brown it first either. I do give it a stir from time to time though.

    Pick out a red looking piece and have a nibble! It should be fine!!

    Ta have just tried some - it does seem 'meaty' as opposed to raw like when you first put it in. I've decided to give it another half hour or so, theres no way it can't be cooked but it would look a bit more appetising if it was a bit browner!
