What can I do with Fondant icing?

I have a 1kg pack of Tesco Ready Ice fondant icing left over from cake decorating at christmas. It has a long shelf life but rather than leave it there until next christmas I wondered about making sweets with it. If I just add some peppermint essence and roll it into small balls and let dry would that be enough or would I end up with rock hard marbles or a soft squidgy mess.
Or is there something else I could do?

im not sure about the sweets...they may be ok id try a couple and see....u could cut out little circles and ice fairy cakes with it...do u need a birthday cake any time soon?onwards and upwards0

The kids have birthday's soon but they prefer butter icing. The fondant is too sweet for them.
I would rather use it up than have it storing. We have cut down on sweets and treats to save money so if there is something I could do with this it would help make up for the lack of sweets elsewhere.The person who moves a mountain begins by carrying small stones.

I have been reading a lovely book from the library (naturally) by Peggy Porschen called Pretty Party Cakes - and they really are!. She has a whole chapter on cupcakes and the way she ices them is to thin down fondant icing. You put it in a bowl and heat it up briefly in the microwave and then add some liquid glucose plus as much water as you need to make it stirrable. Then you can colour it with food colouring. I've been a bit vague about the instructions as I found it was a case of using your own judgement as to when it was right rather than following exactly what she said in the book.
She then suggests that you dip the top of the cupcake in the fondant and let it dry. They do look fantastic. I did some for DD to take into school on her birthday in pale blue, pink, yellow and pale greenwith some glitter cake toppings and they went down a storm.
You would be surprised how much fondant you need to do this, it doesn't go far. I think the cupcakes are too sickly (although they do look gorgeous) but you can never have too much sugar as far as a 13 year old girl is concernedIt doesn't matter if you are a glass half full or half empty sort of person.
