A very easy recipe that I like is: 50g pasta per person. Boil kettle. Chop veg eg peppers, onions etc. Fry these while boiling pasta. Add some fresh chopped tomatoes half way through and some sliced olives near end. Whatever you like really. When pasta and veg are cooked add a dollop of cream cheese (about a heaped dessert spoon per person) and a teaspoon of pesto per person to the pasta and stir before stirring in the veg. It's really nice. It's even nicer with garlic!

It's handy as a quick meal especially if you have saved some leftover chopped onions or peppers in the freezer as I just throw them in from frozen and cook a bit longer. You can use full fat or light cream cheese. I've also added pinenuts at the mixing stage or you could throw them on top when you serve.

For a basic tomato based sauce i fry a chopped onion with a clove of chopped garlic, add a tin of chopped tomatoes/passata, add a sprinkling of basil/oregano and season to taste.
From this base you can then add whatever you fancy to it....peppers, mushrooms, pancetta, sausage other veg.
Its a great one for using up left over bits in the fridge

Blend the sauce (including olive oil), it's elmulsify and give a creamy taste/texture, like you get in Italian Restaurants.

This is exactly what I do, but I tend to add tomatoe puree & a little lemon juice to really bring out the flavour of the tomatoes.:D

Big hit with the whole family & they all think it's far more tasty than the pre made stuff in jars!:j

I fry onions for 15 minutes.
Add minced meat and fry for futher 25 minutes.
Then add two tins of chopped tomatoes and some water.
Also add herbs at this point.
Simmer for an hour or so and gradually boil off the water.
    Happy chappy
