How to make Beef Fried Rice like the Chinese

Does anyone know the recipe for how to make a beef fried rice like you get from the chinese takeaway. It would be most appreciated!

    Not sure on the beef side of it [there's bound to be a recipe online somewhere] but the trick to any fried rice is to cook the rice, rinse it well in cold water until it is cold and leave to drain - and pop into the pan after everything else is cooked. Then add the soy sauce, so that the rice absorbs it in. Lovely.

    Hi skysky,

    Beat two eggs together and fry in oil. Remove from the pan, chop into small pieces and keep warm.

    Fry chopped mushrooms and onions, remove and keep warm.

    Flash fry the beef until cooked, remove and keep warm.

    Add pre-cooked, rinsed and chilled rice to the pan. Fry in oil for a couple of minutes, stirring continuously. Add garlic, chilli (optional) lots of soy sauce and some sesame oil if you have it. Then add the reserved beef, onions, mushrooms, and egg. Stir so the ingredients are evenly mixed and cook until the rice is thorougly heated.
