I have a nearly full 150g pack of baby sweetcorns that really should have been used yesterday (but they are still looking quite fresh in the fridge).
Does anyone know if I freeze these now if they will be ok? Or does anyone have any ideas on a quick vegetarian soup I could make or anything else that I could freeze? I don't like the thought of wasting them but we have our meals planned for the rest of the week...

I have frozen the odd pack of veg including baby sweetcorn when I realised we couldn't eat it before it went off, and it was fine.0

I'd blanch them in boiling water before freezing them. We use loads of baby sweetcorns, I bung them in pasta sauces, veg chillis, lasagne, curries, veg casseroles etc.
We are all vegetarian. My 1yr old and 2yr old love them.Nevermind the dog, beware of the kids!0 -
I love baby sweetcorn - but I have a (silly?) question. I know it's found in the vegetable section, but is it a vegetable or a cereal (as corn is another name for maize)0

Can't answer your question GiJo, but they will be fine if blanched first, then when you cook them again, treat as frozen veg.0

GiJo - it is a starch and I was always taught that it isn't counted as a vegetable usually.... Although the NHS nutrition site:

says that a portion of baby sweet corn is 6 of the little cobs. <G>0 -
These are yummy par boiled for a couple of minutes then bunged on the George Foreman. I can even get my fussy 2 year old to eat them this way.:smileyhea0
