Hi All,
I went to the market last week for some veg and it was great, except i think i went a little ot and now have a few bits that need using up and as its a tight month i was hoping that you could help me please?
I got the following that needs using and if i could make something for DS lunches or mine or anything that i can freeze that would be great, ive still not woken up despite 3 cups of coffee, lol
1lb new pots
normal pots
2 leeks
2 spring onions
ice berg lettuce
toms x10 medium ones
1/2 cabbage
3 wangy carrotts
onions / garlice
5 corgettes
pack cream cheese
cheddar
3 eggs
200grams waffer thin ham - h/m from the freezer and now needs using
I was hoping to use the eggs for something sweet and something for DS lunches. Ive also got a whole chook defrosting for lunch tomorrow so will have leftovers. I know i could make soup, but ive still got 6 portions of leek& pot / pea and ham and brocolli and stilton! I was going to make a chicken pie topped wth mash for later in the week and of course stock but what else can i do with whats there. Ive got normal store cupboard bits (hopefuly)

The onion, garlic, courgettes, leeks & ham would be lovely all chopped/sliced and cooked together then stir in the cream cheese & mix in with cooked pasta for a lovely creamy pasta dish. Put ground black pepper in to counteract the creaminess
You could also do a vegetable bake by slicing all the veggies you fancy, cooking them and putting them in a baking dish, covering with grated cheese & sliced tomatoes and cooking in the oven until the cheese is browned & crispy. You could mix the veggies with pasta first then it'd be a vegetable pasta bake. Or mix it with sliced, cooked, potatoes & call it a potatoe bakeHTH

Well at a very quick think...
Maybe a pasta sauce using the toms and some of the veggies, could freeze some?
Maybe chicken curry? Also put some of the veg in it, serve mashed pots instead of rice (I do this if i've too many pots needing to be used up)
A veggie quiche? Not sure how many eggs you'll need as never actually made one, but could use some ham in it too.
On Weezl's 50p a day thread there is a nice boiled fruit cake recipe. Mixture makes two 2lb loafs tins of cake, it lovely. I have made it so can vouch for it. COuld do as part of packed lunches.
My dad used to make an Irish dish (I think a boxty?) Where was lots of mash potato, ham and an egg on the top.

Hi,
you could use the carrots, onions, tomatoes and shredded cabbage (if its white) in a salad. Add some sliced peppers and some of the left over chicken.
You could also make a stir fry with the cabbage, tomatoes onions and thinly sliced courgette. Just add a tin of beansprouts and some chicken.

Do you think i could freeze the pot / pasta/ veggie bake?
Thinking we may be having pasta tonight instead of the pizza i was going to make0 -

Well, so far ive made, 2 small and 1 large pot/corgette cheesy bakes (now in the freezer).
We had corgette, ham and cheesy pasta for dinner. Was gorgeous!!!
Ive also made breakfast muffins using some of the ham, 1 of the eggs, bit of cheese and some flour and milk.
And now there is a jammy breakfast bar in the oven! Recipe was dead easy and i had all the ingredients.
Still have the pots and a small bit of cheese. Freezer is close to bursting now!0
