Polenta? Mexican???

I got a bag of palenta/ cornmeal I tried to make empanadas with- WHAT a disaster.
Anyway, dont think that waws too successful, but wondering what people use it for apart from a side dish as in some Italian meals, I really didnt like that!
Are there any EASY spicy/ mexican type meals I could make with this?

I Use up polenta by using it to coat chicken etc for baking in the oven, it goes nice and crispy0

Failing that it needs shed loads of flavouring to make it worthwhile. Its nearly as bad as Ugali which is made from maize in AfricaWho I am is not important. What I do is.0
