    I looked at the chocolate cake recipe and it calls for vinegar, i'm seeing this more and more in recipes but i've never used it. I will give it a go next time as I may be pleasantly surprised! :-)

    We have this Austrian Coffee and Walnut cake often, its so easy to make and yet is absolutely delicious. I made one for my Mum for Mothers Day too :) I use Camp coffee instead of the espresso coffee that is listed.

    You could just fill it with butter cream as you would with a normal victoria sponge but the mascarpone and fromage frais mix is really good if you like a less sweet filling.

    You could always do what we do when we go away for the weekend. I make the cake when I have time and freeze the plain layers separately, take out the night before and sandwich together with buttercream when you arrive. Tastes just as good as freshly made.

    i have even frozen cakes with the buttercream already in the middle and on the top. Never had a problem with them.

    Sticky Dark Gingerbread

    8oz or 225g butter
    8oz or 225g soft brown sugar
    8oz or 225g black tracle
    (or 4oz or 100g syrup and 4oz
    or 100g treacle for a lighter mixture)
    12oz or 350g plain flour, sieved
    2 level dsp ground ginger
    1 level dsp ground cinnamon
    2 eggs, beaten
    1/2pt or 250ml milk
    2 level tsp bicarbonate soda


    Method: Melt butter, sugar and treacle together in a pan over a gentle heat. Place the flour and spices in a bowl and stir in the melted mixture, along with the eggs. Beat well together. Warm the milk to blood heat and pour onto the bicarbonate soda, stir and add to mixture. Stir well and pour into a lined and greased 7 1/2" by 11 1/2" roasting tin.
    Bake at Gas Mark 2 (300*F) for 1 1/2 - 2hrs. Turn out and cool on a wire tray. Keep in an airtight tin for 2-3 days before eating.

    Tips:
    Leave the melted mixture to cool before mixing it with the flour (warm is fine).
    I cook this in my MR Fastbake on the cake setting and it cooks it perfectly!

    Morphy Richards Fastbake, its a breadmaker :)
    I make the mixture as directed and just cook it in the breadmaker under its cake setting.
