    How is BBQ different to oven?

    its still a flame and heat.

    therefore its fine as per everyday chicken.

    Why is everyone saying take it off the bone? is this important? I never do:eek:
    coz they are idiots.

    there is no logical explanation for having to remove the bone.

    Thank you for that. I was doubting myself there for a minute. I never remove the bones. Cannot see any reason for it. My father is a chef and he never removes the bones either.

    BBQ is direct radiant heat and an oven is indirect convection heat

    At this time of year, a lot of food poisoning cases are related to food that's been cooked on a BBQ - burnt on the outside but raw in the middle :eek:

    Personally, I don't use a meat thermometer and I wouldnt remove the bones before reheating chicken. Haven't poisoned anyone yet, even when we have had a BBQ (but that's because I'll cook chicken in the oven first and then finish it off on the BBQ

    BBQ will be fine if your cook it correctly.

    Lots of BBQ food posioning happens as the prongs that touch the raw sausage also touch the cooked products passing on micros that way.

    BBQ are generally less acurate as on a tradational one, you can not control the temp like you can on a oven.

    If the coldest spot of the meat reaches 74c then your be fine wether its oven or not. As long as the meat met certain condtions before being cooked.

    Temp probe is a extra check in food safety. There is no harm in using one. Unless your making sponge cake etc your not even realise a probe has entered the food.
    Most people are fine never using one. Its nothing magical.

    However if your cooking for a ill eldery relative, it can help a lot more. As you may be fine eating product X. There immunse system is not so strong.

    ALso while a lot of people say they are fine, most food posioning cases are very minor. Eg you go the tiolet once more in a day than usual. Its nothing major and you probably do not realise anything is wrong.

    Its just a case of risk and where you draw the line. Some people will always get away with more than others. just like smoking, drinking, bad diet people live to well into there 90's, does not mean everyone will be fine.

    I always use a probe, it is not because I can not tell when something is piping hot and cooked, but because after years of probing and recording temps it feels odd not to and you just want to 'double check'.

    My mum is a good cook(as such) but when she last stayed she reheated something for more than ample time and on the correct temp, it was also steaming...yet it was 2 degrees under the safe temp when I double checked and needed just 3 mins longer in the oven.

    I probably would not bother if it was just me, like stephen77 says an adult may just visit the toilet more if something is not 100%, but it gives you certainty when you have children.

    yea thats through incorrect cooking. same could happen in an oven.

    cooked properly and its no different and can be reheated as per oven cooked.

    Indeed, same could happen in an oven, but the heat from a BBQ is much less even than the heat from an oven, so the risk of incorrect cooking is more likely with a BBQ.

    Incorrect cooking whether it's from a BBQ or an oven can still have the same consequences of food poisoning. If you've ever had campylobacter or salmonella food poisoning from a BBQ, then you'll naturally be more cautious.
