Crock pot disaster!

I have just had a curry made in a crock pot and it tasted OK but looked dreadful! The sauce had separated and it was like oily soup. We all ate it but what did I do wrong? It was a chicken curry by the way and the first time I have cooked a curry in a crock pot. I usually use it for stews and casseroles and they are wonderful.

You should have whisked some flour into the sauce and that would have brought it back together

Did you use leg portions as opposed to skinless breast? if so the fat will render from slowcooking, it will stay solid in something cooked faster.
I read that the fat separating in traditional Indian cooking is desirable

Yes I did use leg portions as I do when making a casserole without any problems. I will not make a curry in a crock pot again unless I follow a trusted recipe.0
