I always seperate them and keep them in my conservatory which is quite cool and well away from other fruit.

From the Old Farmers Almanac

Mature fruits give off ethylene gas which stimulates ripening. To hasten ripening, put your bananas in a brown bag with an apple. To slow the ripening, keep the bananas cool and away from other fruits (which also give off gas and cause nearby bananas to ripen). Disconnecting each banana from the bunch will also slow the ripening.

This suggests a temperature of around 11-13 deg C is optimum for storage without damage

• I tend to find putting them in a cold dark cupboard is usually okay. If they do go too ripe and go brown, I usually make banana bread from them.

Does anyone have a good recipe for making banana bread, as several posters have suggested?
Thanks!

I may sound a little bit mad here, but when they go a bit brown and slightly mushy I find they are nice fried in a pan and then eaten from a bowl with sugar.....

this is a recipe from a baby led weaning site.it's not as sweet as some but we love it!i usually make double, a loaf and 12 little buns which freeze very well.

Sugar free banana bread
8oz Nana
3oz Raisins
4oz Flour
2oz butter
1 egg
1/2 tsp mixed spice

Rub in the butter & flour and spice. Add raisins. Whisk egg and mash in the nana. Fold the eggynana mixture into the dry mix. Bake @ 175 for an hour ish. Ta-da - dead easy

I usually replace a couple of ounces of banana with dried apricots and use nutmeg & cinnamon instead of mixed spice. Works really well.

it's not as rude as the title suggests:p

andi peters did a totally delicious banana bread recipe for This Morning last year, although i prefer it without the peanut butter cream.

Frozen bananas are delicious as they are! I wasn't convinced until I tried them but they go just like (banana flavoured obv) ice cream, creamy and really yummy and really good if you're dieting. Just remember to peel them first, unlike me, cutting off the frozen peel with a knife wasn't so fun! :p x
