Cut and Come Again Cake

Hi, years ago, my Nana used to make a "cut and come again" cake.
It was a throw it all in type of mix and used a jar of fruit mincemeat instead of dried fruit. She used to bake it in a roasting tin, there were a lot of us, so I presume that she had scaled up her recipe.
My mum did have a copy of the recipe, but can no longer find it and the one time mum tried to make it, it turned out like pudding and had to be eaten with custard. Nana's no fail easy peasy recipe was not tried again. :rotfl:
Does anyone have a recipe for this, I have looked on google, not extensively, and most of the recipes use dried fruit and mess about creaming butter and sugar etc.
What made me think of this again was a conversation I had with my cousin last week and then finding that asda had jars of their Extra Special mincemeat reduced from £1.35 to 30p per jar :T I had to buy 6 of course

whatatwit I have the recipe for this cake but unfortunately I have to dash out the door.But if no-one posts it before I get back home I'll gladly post it for you and tbh its reminded me of all the flaming jars of mincemeat I bought in Netto cheap a couple of months ago so might bake a few of these cakes myself for the freezer

Penny, I found that one, it's still one of my open tabs
But, it uses dried fruit. I don't really want to just substitute the mincemeat as it would make the mix too sloppy.
I make a few fruit cakes using a Schwartz recipe which with the basics/value dried fruit works out quite cheap.Official DFW Nerd Club - Member no: 203.0 -
Delia Smith does a lovely quick mincemeat cake where you just plonk everything in and then mix but it still uses a small amount of dried fruit, like Rosieben's ones.

Rosie, I might have a try with this one when get home from work tonight.
My mincemeat has 411g in a jar, so I'll use the full jar and omit the dried fruit.
